Breakfast Taco with vegan Omelet
We have a soft spot for tacos and love to experiment with them. Besides classics such as fish tacos (vegan, of course!), tostadas or taquitos, we also serve Korean tacos, ramen tacos, chanterelles tacos or even chocolate tacos. You can find all our taco recipes here.
We could eat Tacos all day long. So today we present you our breakfast version to have a tacolicious morning! Like each Taco Tuesday wthe recipe is very quick and easy. The base of this taco is our vegan omelet. Vegan omelet is very yummy and easy. Add some fresh herbs, some vegetables and some vegan sausages, if you want to, and tada! Breakfast Taco with vegan Omelet

Ingredients
- 3 soft tacos
- 2 tomatoes
- 1 avocado
- some cilantro
- salt&pepper
- oil
- 3 tbsp of lemon juice
vegan omelet
- 175 g (6.1 oz) firm tofu
- 90 ml (0.35 cups) plant-based milk
- 1 tbsp chickpea flour
- 1/2 tsp kala namak
- 1 tsp turmeric
- 1 tbsp cornstarch
- 1 tbsp nutritional yeast
- salt & pepper
- pinch of cayenne pepper
- 1/2 onion
Instructions
- Puree all ingredients for the omelet (instead of the onion) in a high container.
- Peel and finely chop onion. Fold in the chopped onion to the omelet mixture.
- Heat a small pan with plant-based oil. Add omelet mixture and fry the omelet. Season with salt and pepper.
- Peel, de-seed and chop avocado. Wash and chop tomatoes and mix with oil, some lemon juice and cilantro in a bowl. Season with salt and pepper.
- Heat tacos and stuff with omelet and tomato-avocado-salsa.
