Vegan Yeast Pancakes with Apples
Dear friends, it’s time to stay strong now because I have to tell you a secret. It’s an unpopular opinion I have... phew... okay. I have to confess: I’m not the biggest fan of sweet pancakes. Okay, now it’s out in the world.
Eating a single pancakes – jep, also fine for me. But with every pancake on top, I get kind of bored. And this lake of maple syrup all around the stack of pancakes is just an overkill (in my opinion). I know this is hard to hear, especially now, right in the middle of our pancake themed week. But here’s the good news: There actually is one sweet pancake recipe that even I can’t keep my hands off.
Racuchy are Polish yeast pancakes. What makes the difference? Because of the yeast they are incredible fluffy. Think of pancake pillows! Inside, it’s not only batter but apple chunks or slices that make these pancakes fruity and juicy. Sure, you can see it as a penalty point that the yeast needs approx. 30 minutes to rise and develop. But I think it’s rather an act of kindness to give me some time to finally water my flowers or bring out the garbage. And last but not least: Racuchy are traditionally served with confectioner’s sugar only – no maple sryup lake in sight!
So yes, I think want to make a commitment here: Racuchy are more absolute favorite sweet pancakes!
Vegan Yeast Pancakes with Apples
Ingredients
For the batter
- 200 g (1.66 cups) flour
- 1 tsp active dry yeast
- 3 tbsp sugar
- 1 tsp vanilla sugar
- 0.5 tsp salt
- 100 ml (0.5 cup) plant-based milk
- 100 ml (0.5 cup) sparkling water
- 2 apples
- vegetable oil for frying
For serving
- confectioner's sugar
- apple sauce, jam, or fresh fruits
Instructions
Mix flour, dry yeast, sugar, vanilla sugar, and salt in a bowl and set aside.
Heat plant-based milk of your choice in a small saucepan. It should be warm, but not hot, and you should still be able to touch it with your finger. Add warm plant-based milk and sparkling water to the flour mixture and stir to combine, until a thick batter forms.
Time to tidy up your flat as the batter should rest covered at a warm spot for approx. 30 minutes. It will rise and form bubbles on the surface.
Once the dough is bubbly, peel and finely dice or slice apples. Carefully fold them into the batter.
Heat some vegetable oil in a frying pan and add approx. 1-2 tbsp of the batter to form each pancake. Fry pancakes in batches until they are done and golden brown from both sides. Fry them long enough over medium-low heat to make sure that the batter is baked through. The pancakes will grow in volume and get super fluffy.
Dust fresh yeast pancakes with confectioner's sugar and serve them as they are, or with apple sauce, jam, or fresh fruits!
Of course you do not have to use apple slices, but can also eat your pancakes with berries, poppy seeds or leave it clean as it is. It will still taste great!
