Vegan Crispy Potato Waffles
After we've all shared so much love for our basic recipe for sweet, vegan waffles, we decided that your waffle iron deserves even more attention! After all, waffles don't have to be sweet, but can also make you very happy when they're savory.
There are almost endless possibilities for savory waffles. Today we want to show you how to make crispy potato waffles, so basically latkes in a waffle iron. All you need is potatoes, rice flour, and some spices. If desired, you can also add grated zucchini and carrots, or small diced onions. By the way, the rice flour really makes the difference here and will ensure your waffles turn out super crispy. We got this tip from one of our favorite food blogs called KRAUTKOPF and wanted to thank them a lot (not only for the rice flour tip but also in general).
If you don't own a waffle iron, make the batter as written in the recipe and then fry them in a pan! Afterward, add toppings of your choice or get inspired by our two recommended topping ideas that you can find below in the recipe.
Vegan Crispy Potato Waffles
Ingredients
- 600 g (21 oz) potatoes
- 75 g (0.66 cups) rice flour
- 0.25 tsp garlic powder
- 0.25 tsp paprika
- 0.25 tsp ground nutmeg
- salt
- pepper
- optional: zucchini, carrot, or onion
- vegetable oil for frying
Green toppings:
- cucumber, avocado, salsa verde, plant-based yogurt, and cress
Red toppings:
- tomatoes, red onions, dried tomatoes, radishes, vegan pesto Rosso, plant-based yogurt, and chives
Instructions
Peel and roughly grate potatoes, then transfer to a clean kitchen towel. Wring out as much liquid as possible. If you're using other vegetables, such as zucchini, then grate and add them to the kitchen towel as well. Onions can be finely diced and added to the bowl later.
Add grated potatoes, rice flour, garlic powder, paprika, and ground nutmeg to a bowl. Season generously with salt and pepper and stir to combine using your hands.
Preheat your waffle iron and brush with some vegetable oil. Add a large pile of grated potatoes, so you really need to squeeze them down to close the waffle iron. Only this way, you'll get thick, but crispy waffles. Fry waffles until they're golden brown, then remove from the waffle iron and repeat this step with remaining grated potatoes.
Once your waffles are done, add toppings of your choice! We went for a green topping with cucumber, avocado, salsa verde, plant-based yogurt, and cress. For the red topping, use tomatoes, red onions, dried tomatoes, vegan pesto Rosso, plant-based yogurt and chives.
