Vegan Chocolate Bar with Hazelnut Filling (Vegan Kinder Bueno)

Once again, I have ventured into a small craft project. And I can tell you, this make-a-wish recipe was the most challenging for me so far! Everyone knows it, and everyone loves it – and to create a copy of it, which hopefully everybody likes the taste of, has put me a biiit under pressure. Luckily, I had Pablo by my side in the recipe development, who had to test all my variations against the original and report exactly what I should change. So, many, many thanks at this point to you, Pablo.
But besides testing, he played another crucial role in the process of creating this recipe: His vacation to the US definitely played into my cards here, as we wanted to order a Bueno mold that could only be sent to an American address. Now, you don't have to order this exact mold and fly to the US to recreate this Kinder Bueno. Technically, it should work with all molds – even better if they are made of silicone because you can bake the wet wafer sheets directly in the mold and do not have to freeze them beforehand. Another alternative would be a mold where you don't even have to shape the waffle plates. Then you can also omit the soaking of the waffles.
**And where to buy vegan waffle plates?
We get this question repeatedly as soon as we use them in a recipe. So here's the answer: You can often find them in Russian or Turkish supermarkets. However, if you shouldn’t find one there or don't have a supermarket nearby, just order them online.
The filling:
For the filling, I tried many different natural hazelnut butters and in the end, I decided to use a light hazelnut butter. Firstly, the color comes closest to the original filling and secondly, it simply tasted better. If you have a lot of time, you can of course make your own hazelnut butter. A little tip: Toast your hazelnuts lightly either in the oven or in a frying pan. If you have some of the filling left over, don't worry. It's perfect as a sweet spread, topping on your cereal, or just to spoon as a snack.
You don't need many ingredients to make the Buenos – only five to be exact (plus salt, but I'm not counting that) – but you do need a lot of time and a lot of patience. But I'm sure you can do it. So off to the kitchen!

Vegan Chocolate Bar with Hazelnut Filling (Vegan Kinder Bueno)
Ingredients
For the hazelnut filling:
- 150 g (5.33 oz) vegan white chocolate
- 220 g (7.66 oz) light and natural hazelnut butter
- pinch of salt
Also:
- 4 vegan waffle plates
- 200 g (7 oz) vegan milk chocolate
- 100 g (3.5 oz) dark chocolate
- 1 tbsp coconut oil (optional)
Instructions
To begin, melt the white chocolate over a water bath or in the microwave and place it in a bowl with the hazelnut butter and salt, mix well and set aside.
Then cut the vegan wafer sheets to size (top of bar: 13.5 cm × 4.5 cm / 4.5 inch x 1.5 inch; bottom of bar: 12.5 cm × 3.5 cm / 4 inch x 1 inch). The dimensions here depend on the mold size. Place the larger wafer plates briefly in a bowl of water and then carefully dry them with a cloth to absorb the excess water. Press the now moldable waffles into the mold and place them in the freezer for about 20 minutes until they are completely frozen.
Tip: If you have a mold that doesn't require you to shape the waffle plates, you can omit this step.
In the meantime, preheat the oven to 180 °C / 350 °F (convection heat). Remove the frozen waffles from the mold, place them on a baking sheet with baking paper and bake the waffles for about 12–13 minutes until they are lightly brown and crisp. Add the bottom plates of the bar to the oven for the last 5 minutes of baking time. Turn the waffles over halfway through each time.
Once the hazelnut filling has firmed up a bit, fill the cooled wafer tops with the hazelnut cream. Then place the waffle base on top and press down gently so that both waffle layers stick together due to the hazelnut cream.
Melt the vegan milk chocolate over a water bath or in the microwave and add coconut oil optionally. Coat the bars with the chocolate and let them dry in the refrigerator.
Meanwhile, melt the vegan dark chocolate over a water bath or in the microwave. Once the milk chocolate has dried, spread the dark chocolate over the bar in strips with a spoon and let dry again in the refrigerator.
