Vegan Burger with peanut sauce & marinated tofu

“Tofu tastes like a wet sponge“: a sentence that is right and wrong at the same time. Preparing tofu properly is a tough task. Cause without any preparations (e.g., spices and marinades) natural tofu just tastes like ... natural tofu (despite smoked tofu or tofu that is already prepared with herbs or spices). Today we show you how to make a spicy tofu patty for a burger. All you need is the right spices and a little patience.

To provide your tofu with enough flavors, we prepare a marinade based on soy sauce. With the help of fresh ginger, garlic, and sriracha, we add an umami flavor as well as some freshness and spiciness. Your tofu should marinate for at least one hour (the longer, the better!) You can prepare the patties on the grill or use a (grill) pan. The spice consists of 100% natural ingredients, does not require the addition of sugar or flavor enhancers and gives your tofu a slightly spicy taste. The ingredients of the spice are sea salt, garlic, onions, ginger, paprika powder, curcuma, cilantro, fennel, chilli, green pepper, cilantro leaves and mustard flour. Vegan Burger with peanut sauce & marinated tofu

30 minutes (+ min. 60 min. waiting time)

Ingredients

  • 2 burger buns
  • optional: sweet potato fries as a side dish
  • optional: 50 g peanuts

tofu

  • 400 g natural tofu
  • 100 ml soy sauce
  • 1 clove of garlic
  • 20 g fresh ginger
  • 1 tsp rice vinegar
  • 2 tbsp sriracha
  • 2-3 tsp Asia tofu spice (e.g., from Just Spices)

Peanut sauce

  • 150 ml coconut milk
  • 1 tsp soy sauce
  • 50 g peanut butter
  • 1 tsp sriracha
  • 1 tsp agave syrup

topping

  • 1 cucumber
  • 1 carrot
  • 0.5 mango
  • 1 scallion
  • 1 lime
  • optional: 5 g fresh cilantro

Instructions

  1. First, marinate the tofu. To do this, cut the natural tofu into 4 thick slices and squeeze out the liquid. Place the tofu slices on kitchen paper.
  2. Peel and finely chop the ginger with a teaspoon. Peel the garlic and press through a garlic press.
  3. Mix the soy sauce, rice vinegar, sriracha, garlic, ginger, and the Asia tofu spice in a small bowl. Put the tofu in the marinade and let it soak overnight (otherwise at least 1 hour).
  4. Open a can of coconut milk for the peanut sauce and puree the thick layer of coconut milk with the soy sauce, peanut sauce, sriracha, and agave syrup. Depending on the consistency, add more coconut water.
  5. Now prepare the remaining ingredients: wash the cucumber and peel off long strips with a peeler. Peel the carrots with the help of a julienne peeler to get fine strips. Peel the mango, remove the flesh, and cut into strips.
  6. Wash the scallion and cut into rings. Halve the lime and squeeze out the juice. Optional: wash the cilantro.
  7. Remove the tofu slices from the marinade, drain them briefly and grill them on the barbecue (or a grill pan) for 5-6 minutes. Halve and grill the burger buns afterward.
  8. Brush the lower burger bun with peanut sauce and layer the ingredients on top. Brush the upper bun with sriracha.
  9. Serve the burger with sweet potato fries and peanuts.

Tip: You can use gluten-free Burger Buns and soy sauce to prepare the recipe without gluten.
