Vegan Snickers Energy Balls
We're usually not the biggest fans of energy balls, so it does mean a lot when we publish a recipe for these guys. What we often dislike about energy balls is that you need way too much crazy ingredients for them, that they still often taste quite bland, or have a texture that we're not in favor of. However, these Snickers energy balls are wonderful combination of sweet and salty flavors, they are easily prepared, AND they hide a small, crunchy peanut inside – win, win, win!
So if you can't manage to have a proper breakfast in the morning, these energy balls will satisfy your hunger until lunch (and they also rescue you when you suffer from low battery in the afternoon). All you need for the preparation is a suitable food processor or mixer that can handle dates. We recommend to store these snacks in an airtight container and eat them within five days. Otherwise they tend to dry out a bit, which we want to avoid, of course.

Vegan Snickers Energy Balls
Ingredients
- 250 g (9 oz) peanuts (roasted, unsalted)
- 20 extra peanuts for the filling
- 1 vanilla bean
- 300 g (10.5 oz) pitted dates
- 1 pinch of salt
- 2 tbsp unsweetened cocoa powder (optional)
Instructions
- Halve vanilla pod lengthwise and scrape out the pulp.
- Add the weighed peanuts (not the single ones for the filling), dates, salt, vanilla pulp, and (if used) cocoa powder to a food processor. Mix for approx. 2-3 minutes.
- Use your hands to form 20 smaller balls out of the mixture. Place one of the remaining peanuts in the middle, and roll again to form a round ball. This way, you get an extra crunch for your energy balls.
