Oktoberfest Taco with vegan Sausage Salad
We have a soft spot for tacos and love to experiment with them. Besides classics such as fish tacos (vegan, of course!), tostadas or taquitos, we also serve Korean tacos, ramen tacos, chanterelles tacos or even chocolate tacos. You can find all our taco recipes here.
To be fair, we could easily dip a taco into beer and shout „Oans, zwoa, g’suffa“ and Oktoberfest it is! But we prefer Bavarian sausage salad in a vegan version. By the way – sausage salad – so German! In the Bavarian version there’s no mayo but only a nice oil and vinegar dressing. So what you get in the end, is a not-so-typical but fresh taco. You can find vegan pork sausages in the supermarket by now, but if you don’t have, you can easily replace it with (smoked) tofu.
Oktoberfest Taco with vegan Sausage Salad

Ingredients
- 6 soft tacos
- 4 tbsp mild mustard
- 2 tbsp plant-based mayo
- 2 pretzel buns
FOR THE VEGAN SAUSAGE SALAD
- 200 g (7 oz) vegan sausage
- 1 yellow pepper
- 1 red onion
- 8 radishes
- 5 gherkins
- 1/2 bunch of parsley
- 1/2 bunch of chives
FOR DRESSING
- 4 tbsp oil
- 2 tbsp white wine vinegar
- 1 tbsp mild mustard
- 1 tbsp agave nectar
- salt&pepper
Instructions
- Let's start with the sausage salad. Therefor you only need to cut all ingredients as you like - into stripes, dices or slices. Put everything in a large bowl and mix together.
- In another smaller bowl, stir all ingredients for the dressing, then pour over veggies and sausage and set aside for 30 minutes. Afterwards you can season it with some more pepper and salt.
- In the meantime, cut pretzel buns in slices and roast from both sides in a pan without any oil.
- Also mix mayo with mild mustard in a small bowl.
- And then let the games begin. Spread some mayo-mild-mustard on a taco, pile sausage salad on it and finish with some crisp pretzel bun slices.
