Vegan Chicken-Peach-Tacos with lime yogurt
We have a soft spot for tacos and love to experiment with them. Besides classics such as fish tacos (vegan, of course!), tostadas or taquitos, we also serve Korean tacos, ramen tacos, chanterelles tacos or even chocolate tacos. You can find all our taco recipes here.
Tacos don’t have to be greasy and unhealthy. Well, most of the time. We feel responsible to show you a light recipe, so you don’t forget to eat tacos throughout the summer months. This fresh and easy Taco Tuesday is hearty and salty, fresh and light & sour and sweet, all in one. We used vegan chicken you get in every asian supermarket and used some teriyaki sauce to season it a bit more. So no time to wait, let’s start!
Vegan Chicken-Peach-Tacos with lime yogurt
4 Tacos
30 minutes
Ingredients
- 4 taco shells
- 1 salad heart
- 1 peach
- 1 can of vegan chicken (290g)
- 2 - 3 tsp teriyaki sauce
- 0.5 tsp chili powder
LIME YOGURT
- 250 g (1 cup) vegan yogurt
- 1 lime
- salt & pepper
Instructions
- Let's start with the lime yogurt! Rinse lime and grate peel finely. Mix all the ingredients in a small bowl and don't forget to season enough. I also added a bit of the lime juice, cause I really like it sour.
- Wash peach, take the stone out and cut the flesh in small pieces.
- Trim and wash lettuce and slice into very fine strips.
- Take a non-stick pan and let the vegan chicken brown gently. Season with chili! Lower the heat and add the teriyaki sauce. Remove from the heat.
- Heat the tacos in a pan or in the oven and stuff with lime yogurt, salad, teriyaki chicken and peach.
