Vegan Summer Rolls with 2 Dips

Isa and I had a long talk about whether we really need a recipe for summer roles on our blog. We do love them a lot, but the thing is that there are millions of recipes in cookbooks and blogs and sometimes you have the feeling that you can't add anything new on the topic. So why share the thousandths recipe for an avocado bread when the exact recipe is already out there?! I had the same feeling with summer rolls, but Isa disagreed, and so here we are, settling somewhere in the middle.

Here are summer roles - but without a recipe, ha! Because if you think about it, one of the many great things about summer roles is that you actually don't even need a recipe for them. You can throw in almost every vegetable you can find in your kitchen. My favorite combination is carrots, cucumbers, avocado, fried tofu and sprouts, but feel free to use whatever you can find in your fridge!

Vegan Summer Rolls with 2 Dips

10 summer rolls
20 minutes

Ingredients

  • 10 rice paper wrappers
  • vegetable or fruits of your choice (e.g. cucumber, carrot, bell pepper, mango, salad leaves, avocado, cilantro, soy sprouts, red cabbage, ...)
  • tofu (optional)
  • glass noodles (optional)

For the peanut dip:

  • 2 tbsp creamy peanut butter
  • 5 tbsp water
  • 1 tsp agave syrup
  • 2 tsp soy sauce
  • 2 tsp lime juice

For the soy and lime dip:

  • 2 limes (juice)
  • 1 tsp rice vinegar
  • 1 cm (0.4 in) ginger
  • 1 tsp sesame seeds
  • 1 tsp soy sauce
  • 1 tsp toasted sesame oil
  • 1 tsp agave syrup
  • 0.5 tsp chili flakes

Instructions

  1. Start by preparing vegetables and fruits. In order to make rolling easier, cut every ingredients to the same lenght. You'll thank us for this tip later.
  2. If you use tofu, feel free to decide if you want to fry the sliced tofu in some vegetable oil first. In case you're using glass noodles, prepare them to the package instructions.
  3. Prepare a large bowl or deep dish with warm water. Once by one, add a sheet of rice wrapper and let it soak until it's soft. Remove from the water and place the filling of your choice in the middle of the lower third of each wrapper.
  4. Fold the bottom side of the rice wrapper over the filling, then fold in the left and right side into the middle. Now you can roll the summer roll into a log. Repeat this process with the remaining rice paper wrappers and filling.
  5. As soon as the summer rolls are done, it's time to prep the dips! For the peanut dip, mix creamy peanut butter, water, agave syrup, soy sauce, and lime juice. Season to taste. For the lime dip mix lime juice, rice vinegar, soy sauce, sesame oil, and agave syrup. Peel ginger and grate it, then add to the dip. Add sesame seeds and chili flakes and season to taste.
  6. Serve summer rolls with dips and enjoy!
