Vegan Biscoff Semolina Pudding (with 5 Ingredients)

Even as a child, I used to love semolina pudding. In my family, we would always have it for dessert, never as a proper meal. Most of the time, we just sprinkled it with sugar and cinnamon, but somedays, we also added jarred morello cherries which my brother and I loved! But, as we never weighed the ingredients, the semolina pudding always came out different: either too liquid or much too firm. To make sure this doesn't happen to you, we're going to show you how to prepare the most delicious semolina pudding topped with crunchy Biscoff biscuits.

For semolina pudding, it doesn't matter which plant-based milk you use. Just go for oat milk, soy milk, or pea milk – whatever you like best. You can also adjust the toppings according to the season and your taste. We're using steamed apples, Biscoff biscuits, and chocolate today. If you don't have the time for steaming, just use raw apples. Other fruits like bananas, berries, or oranges also work well.

The recipe serves two to four people. Two if you have it as lunch, four if you have it as dessert. Semolina pudding makes a great breakfast too. It's quick and can be prepared in advance. Another tip for when you’re in a hurry: You can buy the Biscoff Cream ready-made in the supermarket, so you don't have to make it yourself.

Vegan Biscoff Semolina Pudding (with 5 Ingredients)

2 main servings (or 4 servings as dessert)

Ingredients

For the semolina pudding:

  • 1l (4.25 cups) plant-based milk
  • 120 g (0.75 cup) soft wheat semolina

For the topping:

  • 1-2 apples
  • 100 g (3.5 oz) Biscoff biscuits
  • 60 ml (0.25 cup) plant-based milk
  • 1 pinch of salt
  • 30 g (1 oz) vegan chocolate

Instructions

  1. Pour the plant-based milk into a large saucepan and bring to a boil. While whisking, add the soft wheat semolina and let the mixture simmer. Remove the pot from heat and let the semolina pudding sit and soak for a couple of minutes.

  2. Wash and thinly slice the apples. Steam them in 130 ml (0.5 cup) water for approx. 6-8 minutes with the lid closed until the water has boiled away.

  3. Crush 80 g (2.75 oz) of the biscuits either with a knife or in a blender. Add the plant-based milk and salt and combine well until the mixture is creamy.

  4. Crush the remaining 20 g (0.75 oz) biscuits and set aside for serving. Next, melt the vegan chocolate in the microwave or a double boiler.

  5. Finally, serve the semolina porridge in a bowl and top it with the steamed apples, melted chocolate, Biscoff biscuit cream, and the remaining Biscoff crumbs and enjoy!
