Vegan Apple-Cherry Hand Pie with Icing Sugar
Many do not like autumn so much, because the weather is bad, it’s getting colder and the days are getting shorter. I, however, like all these things you can make yourself comfortable on the couch with a cup of tea and a book and snuggle up in a cozy blanket. In addition, I associate autumn with a lot of delicious, but especially feel-good food. You cook more soups, stews and other hearty dishes . For me, the combination of apples and cinnamon belongs in the autumn months as well. For this reason, today we bake a delicious hand pie with an apple-cinnamon cherry filling.
Normally, when you look at a recipe for hand pies, you would probably expect small, filled dumplings. Just as the name suggests, the little pies can be eaten easily with your hand and are perfect as finger food. Today, however, we have modified the classic version a bit and baked one large dumpling instead. If you want, you can of course also prepare many small ones, but if it has to be quick, there is simply a large one. The round, vegan quiche and tart dough from Tante Fanny is perfect for this. When preparing it, you just have to roll out the dough and you can use the baking paper it’s rolled in . It's best to take the dough out of the fridge 10 minutes before starting , so that it softens a bit and doesn't break. Besides this dough, Aunt Fanny also has many other vegan dough options. However, if you have the time and desire, you can also cut out many small circles from the large dough and bake several small hand pies. Besides the size of the pies, you can also change the filling, because instead of apples and cherries you can use any other fruit you like. If you decide to use the frosting, be sure to let the pie cool or it will run off. Alternatively, you can of course use any other topping you like: How about chocolate or fruit sauce or a nut puree? For us, the more the merrier! And now we'll take a slice and have a little coffee and cake break in the office.
Vegan Apple-Cherry Hand Pie with Icing Sugar
Ingredients
For the filling:
- 2 apples
- 350 g (12.33 oz) cherries from a jar (drained)
- 50 ml (0.25 cup) cherry juice from the jar
- 0.5 lemon (juice)
- 50 g (1.75 oz) sugar
- 2 tsp vanilla paste
- 2 tsp cinnamon
- 2 tbsp cornstarch
For the icing:
100 g (3.5 oz) powdered sugar
0.5 lemon (juice)
Also:
- 2 vegan quiche or tart doughs (e.g. fresh quiche & tart dough from Tante Fanny).
Instructions
Preheat the oven to 190°C/375°F(top/bottom heat). Wash and core the apples, cut them into small pieces , and put them into a pot. Drain the cherries and collect the liquid in a bowl. Add the drained cherries to the pot as well.
Add lemon juice, sugar, vanilla paste, and cinnamon to the cherry juice and mix. Then, continuously stir with a whisk, add in the cornstarch and put to the apples and cherries in the saucepan.
Heat the mixture over medium heat and simmer for about 5 minutes until it reaches a thick consistency. Keep stirring to make sure nothing burns.
Roll out the vegan quiche or tart dough on a baking sheet. The rolled baking paper can be used directly for baking. Now spread the filling on the dough. Leave a margin of about 1.5 cm (0.6 inches). Place the other dough on top and flatten the edges with a fork. Then press in the dough with the handle of a wooden spoon to make 8 pieces.
Bake the hand pie at 190°C/375°F (top/bottom heat) for about 30 minutes until it’s slightly brown , and then let it cool.
Once the hand pie has cooled, mix powdered sugar and lemon juice and spread over the top.
