Taco with green Asparagus & vegan Sauce Hollandaise
We have a soft spot for tacos and love to experiment with them. Besides classics such as fish tacos (vegan, of course!), tostadas or taquitos, we also serve Korean tacos, ramen tacos, chanterelles tacos or even chocolate tacos. You can find all our taco recipes here.
Before saying goodbye to asparagus for this season, let’s taco ’bout it! We’re always excited when the first asparagus is waiting, because as everyone knows: The pleasure does not last forever and before you know it, asparagus season is already. But at some point, we get a bit bored to always eat it with potatoes, so Taco Tuesday came just at the right time! So before saying goodbye to asparagus for this year, we dedicate this Taco Tuesday to it. As a special, we also added vegan bacon which is optional. You can do it with smoked tofu or leave it out at all.
Taco with green Asparagus & vegan Sauce Hollandaise
Ingredients
- 6 soft tacos
- about 12 stems of asparagus
- 6-10 stripes of vegan ham – optional
- 1 bunch of chives
- Oil
- Salt&pepper
- agave syrup
FOR YOUR SAUCE HOLLANDAISE
- 2 tbsp vegan butter
- 2 tbsp flour
- 100 ml (0.4 cup) veggie stock
- 100 ml (0.4 cup) plant-based cooking cream
- 1 tbsp mustard
- 2 tbsp vegan white wine
- salt, pepper
Instructions
- Let’s start with roasting the asparagus. Therefore just lightly bend them at the ends, and they will automatically break at the point where they are not woody anymore.
- In a large pan or grill pan, heat 2 tbsp oil and sauté the asparagus until it gets soft (around 3 - 5 minutes). Season with salt, pepper and agave syrup so it will caramelize a bit. Afterwards, let it rest.
- In another pan, heat another tbsp oil and roast your ham or smoked tofu from both sides. Afterwards, drip it with some kitchen towel and let it rest as well.
- For your Sauce Hollandaise, take out a small sauce pot. Melt butter and stir in flour. Always keep stiring, so it does not clot. Deglaze with veggie stock, but keep stiring all the time. Bring it to a boil, then add plant-based cream, take the heat down a bit and season with mustard, white wine, salt and pepper. Let it simmer for 5-10 more minutes so it thickens.
- Time to arrange! You can either take your soft tacos as they are or heat them up in the oven for 1-2 minutes. They should not get crunchy, but just warm up a little.
- Take a taco, spread some Sauce Hollandaise on it. Than add your bacon, asparagus and some more Sauce Hollandaise. At the end, top it with some finely chopped chives.
This Sauce Hollandaise is thicker than it would normally be. If you’d like to eat it with potatoes and asparagus, you can still use this recipe. Just add more veggie stock and soy cream (150 ml each) and don’t let it thicken that much.
