Quick Chocolate and Cherry Sandwich Cookies

But back to our recipe: Our shortcrust is ready in no time. When it comes to rolling out dough, Julia is an absolute pro. The other day she taught me a hack for rolling out your shortcrust dough evenly using a sheet of parchment paper. Just fold it over on the sides to create a square. Place your dough in the center and roll it out evenly within the folded parchment paper. After removing your shortcrust pastries from the oven, you have to be quick. Spread the fruit spread on one of the pastries while it's still warm. Not only does it smell heavenly, but it tastes a thousand times better. We used a fruit spread from Flink's Finest, Flink's new premium private label. The spreads come in many delicious flavors like Apple Strudel (apple-raisin-cinnamon ), Cherry-Banana, Strawberry-Elderflower, or our favorite: Black Forest (cherry-chocolate). It tastes incredibly delicious, and goes perfectly with our recipe. The fruit spreads are produced locally in the north of Germany and contain less sugar and more fruit than conventional fruit spreads, and honestly, chocolate and jam all in one?! How have we never thought of that?
Now you just have to layer both shortcrusts, but be careful so they don't break. Spread some melted chocolate on top, and that's it. You could also cover the sandwich cookies with some vegan chocolate spread to save some time.
Quick Chocolate and Cherry Sandwich Cookies
Ingredients
- 300 g (2.5 cups) wheat flour type 405
- 100 g (0.5 cup) sugar
- 16 g (1.5 tbsp) vanilla sugar
- 200 g (1.75 sticks of butter) vegan butter
- cold water as needed
- 160 g (5.5 oz) chocolate cherry fruit spread(e.g. Black Forest from “Flink's Finest”)
- 150 g (5.25 oz) dark chocolate
Instructions
Preheat oven to 180°C/355°F (top/bottom heat). Mix flour, sugar, and vanilla sugar in a large bowl for the dough. Add cold vegan butter and knead in carefully with your hands until you get a smooth dough. If the dough is too crumbly, add a little cold water – it should not be sticky though.
Halve the dough and roll out each half into a rectangle (20x30 cm/8x12 inches). Transfer to a lined baking sheet and bake the shortcrust at 180°C/355°F (top/bottom heat) for approx. 10 minutes.
In the meantime, melt vegan chocolate in a double boiler.
Spread cherry chocolate fruit spread generously on one of the shortcrust bases while it's still warm, then place the second one on top.
Cover with melted vegan chocolate and slice into eight equal-sized pieces. They will keep in the refrigerator for up to five days.
