Nice Cream

The easiest ice cream recipe in the world! Nice Cream doesn't require vegan whipped cream, an ice cream maker or hours of stamina – just one ingredient, a stand mixer and 5 minutes.
Plus, it's inexpensive, free of industrial sugar and saves you in a life situation we all know too well: You've once again missed the time when the bananas you bought still green were perfectly ripe to eat. Now, however, you can use them for our Nice Cream recipe! Just peel the brown bananas, cut them into small pieces, freeze them and always have them on hand for sudden ice cream cravings.
You don't like bananas? I'm not a fan of pure banana ice cream either, so I mix cocoa powder, peanut butter or even other fruit with the bananas.
Or how about a dessert version of your favorite drink? Nice Cream also tastes good with coffee, matcha or chai powder – there are no limits. You can also go all out à la Ben & Jerry's when it comes to toppings: Whether it's a hard chocolate crust, cookies, nuts or fresh fruit, it's all about trying new combinations.
And if you want to skip the bananas altogether, there's also the option of using frozen cauliflower, tofu or pretty much any frozen fruit as the base for the ice cream. We then use soy milk, nut puree or avocado for a creamier consistency.
If you don't have a high-powered blender like the one we have in the office, you can also dice the bananas into tiny cubes before freezing and let them thaw before you blend them.
And a little tip at the end: It's best to eat the whole portion of Nice Cream in one sitting because when you freeze it again, the consistency changes and you no longer have such a creamy ice cream as with the fresh preparation.

Nice Cream

2 servings
10 minutes (+ 2-3 freezing time)

Ingredients

  • 2 frozen bananas (freeze a day before)
  • 1 tsp vanilla flavor (optional)

Instructions

  1. Make sure to prepare frozen bananas one day ahead. Peel and roughly cut them, then place them in a freezer overnight.
  2. Now you only need to take out bananas from the fridge and blend until smooth.
  3. If you don’t like the pure taste of bananas, add some vanilla flavor and stir one more time.
