I'm a huge fan of a long and extensive breakfast: from a stack of pancakes, fresh fruits, scrambled tofu to oven-fresh bread rolls. If I had the time, I would have breakfast all day long! But it was a long way to go until I was able to prepare all my favorite dishes from "the past" (when I wasn't vegan) as plant-based ones that would taste the same, or even better.
Especially at the beginning, when you start with a different and new diet, it can be difficult and confusing how to replace certain ingredients or how to prepare your favorite dish now. Luckily, we have a recipe for almost every breakfast classic to show you how it's done! Whether you crave something hearty, sweet, simple or more fancy: we hope you find some inspiration to take your Sunday breakfast to the next level.
1. Vegan Pancakes
Is there anything better than the smell of fresh pancakes in the morning? We doubt it. The all-time favorite for an extensive Sunday breakfast is so easily prepared vegan: jus treplace cow's milk with a plant-based option and add bananas, plant-based yogurt and some vinegar for binding. There you go!

Waffles are something like the little sister of pancakes. Although they are often associated with children's birthdays, they are actually an incredibly versatile breakfast option. You don't even need flour for all of these – some are prepared with rolled oats or potatoes. Our wish for the future: eat more waffles.

3. Oats
Rolled oats are not only incredibly healthy, but also quite versatile. Whether you use them crispy in granola, buttery soft in porridge, or as a topping for soy yoghurt – it's always worth having a well-filled jar of rolled oats at home. You can differantiate between softe and crunchy rolled oats. The former is ideal for porridge and oatmeal. The crunchy ones are your best option for homemade granola.

When going vegan, many people miss their hard-boiled egg, scrambled eggs, or omelette for breakfast. Whatever it is, with kala namak at your side, there is nothing stopping you from getting closer to the taste of egg again. Kala namak is an Indian sulphur salt that tastes and smells like egg by nature. You can use it to turn a simple pan-fried tofu into an omelette - it's like magic!

Bread is one of Julia's great culinary loves. We would love to treat ourselves to fresh, soft bread with a perfectly crisp crust every morning.
